Ingredients:
- 4 medium boneless, skinless chicken breasts (To make it vegan, substitute with three 14 oz. cans or 2 cups dry of your favorite beans.)
- 14 oz. can diced tomatoes
- 14 oz. can tomato sauce
- 1 chopped onion
- 5 garlic cloves
- 2 Tablespoon dried basil
- 1 Tablespoon dried oregano
- 1 Tablespoon dried thyme
- 1 Tablespoon dried sage
- 2 bay leaves
- 4-6 cups chopped veggies (Choose your favorites or least-favorites-but-you-know-you-should-eat-them veggies. The flavors of the tomatoes and spices take over.)
- 3 cups chopped potatoes
- 3 cups chicken broth (Or to make it vegan, use veggie broth.)
Directions:
- Cut vegetables.
- Put everything into the slow cooker and set it on high for 5 hours or on low for 8–9 hours.
- Ladle out and enjoy!
