Let’s Sack Celiac: Gluten-Free Recipes for the Big Game

NFCA’s Director of Communications and New Media, Claire Baker, shares her recipes for a great football-filled Sunday.

Nothing is better than settling down to watch the Big Game with family and friends, and especially munching on some awesome gluten-free snacks. Those of us with celiac disease and other gluten-related disorders deserve a break, especially with all the gluten-bashing that’s going on out there. We at the National Foundation for Celiac Awareness (NFCA) want to help you have a terrific game day. So, to help spread some gluten-free Super Bowl inspiration, we invite you to post your favorite game day snacks and recipes on our Facebook page and to your social media channels and mark it #LetsSackCeliac so we can like, appreciate, and copy your menu. Who knows? Maybe some of us will show up at your house to sample your treats!

Here are a couple ideas to get you started. Even if you are Joy Behar, you can’t argue that these game-time treats are delightful, despite the fact that they are suitable for the celiac set.

Deluxe Nacho Dip Deluxe

This dip combines the amazing-ness of nachos with the convenience of a scoopable food. For the traditionalista, use tortilla chips. For the health mavens, scoop with crudité.

Ingredients:

  • 1 can of gluten-free refried beans
  • 1 can enchilada sauce
  • 1 can of green chiles
  • 1 cup chredded cheddar cheese

Optional toppings:

  • Shredded lettuce, chopped black olives, jalapeno peppers, avocado strips or guacamole (see the Deflategate Cheater Guac recipe below). Use your imagination!

Directions:

  1. Preheat the oven to 400.
  2. Spray a 8 X 8 glass baking pan with gluten-free non-stick cooking spray.
  3. Spread the refried beans in the bottom of the dish. Layer the enchilada sauce on top, followed by the green chiles and cheese.
  4. Bake covered for 20 minutes. Uncover and bake another 10 minutes or until the cheese is brown and bubbly.
  5. Top with optional ingredients and serve with chips or veggies.

Deflategate Big Cheater Guacamole

Ingredients:

  • 2 ripe avocados
  • ½ cup of your favorite salsa
  • 1 tsp. of lime juice
  • Course-ground sea salt, to taste

Directions:

  1. Cut the avocado in half, remove the pit and skin, and mash the avocado with a fork in a medium bowl.
  2. Add the salsa a little at a time until you get the consistency you like. Add the lime juice, which gives it a Jimmy Buffet thing andkeeps the guac from turning brown so quickly.
  3. Sample with chips. Salt to taste.
