Elon University Goes Gluten-Free

Elon is the latest school to recognize celiac students’ needs.

Starting Sept. 11, students at Elon University will enjoy more dining options, including late night hours and gluten-free meals, according to the University’s student paper.

“The gluten-free option came from a desire to offer food for a growing number of students with Celiac disease,” the article reported after an interview with Ryan Moore, assistant Food Service director for ARAMARK.

“In order to accommodate (students who need gluten-free options), we really took the time out this summer to figure out how best to serve them,” Moore said.

Elon University is the latest school catering to celiac needs. Students and school-based foodservice managers and dietitians can learn more about navigating the gluten-free scene on campus by signing up for NFCA’s “Back to School” Webinar, “Heading Off to College with Celiac Disease.” The Webinar will be held this Sunday, Aug. 29, at 9 p.m. ET/6 p.m. PT.
