Parnika ShankarThe Voices of Celiac Disease

“Remember that this too will pass, and there is a beautiful life beyond Celiac: we just have to look for it.”

Since I was 15, I have come to understand the firsthand challenges of navigating an autoimmune diagnosis—from misdiagnosis and nutritional deficiencies to the social and emotional toll of symptoms and treatment. I am dedicated to advocating for change in celiac disease and autoimmune disease awareness and passionate about transforming the way we approach health and nutrition. My journey has fueled my commitment to raising awareness about often overlooked symptoms and advocating for a more holistic, empathetic, and patient-centered approach to treatment.

As a Beyond Celiac ambassador and current student at Rice University, I am dedicated to empowering others with the knowledge and resources needed to advocate for their health, ensuring that those with celiac disease feel seen, and supported. I am currently studying psychology at Rice University, especially after seeing the positive impact of gastroenterology psychology (GI Psych) on my health journey. I hope to use my platform to inspire change in both healthcare and the food industry, creating a future where safe, nourishing food and healthcare are accessible to all.

Remember that this too will pass, and there is a beautiful life beyond Celiac: we just have to look for it.
