Hi, I’m Courtney! I live in Marlton, New Jersey with my husband and two beautiful children, who are 5 years and 9 months old. We are a Celiac Family. Even our mini-goldendoodle, Barkley, cannot eat gluten and wheat.

I was diagnosed with celiac disease when I was 17 years old. When I was first diagnosed, it was hard for me because I was the only one in my family with celiac disease and it was such a lifestyle adjustment. I knew it would make me feel better and I decided to look at it with a new and more positive perspective. I wanted to take this diagnosis as a new life adventure, rather than an inconvenience. I was constantly researching and looking up new recipes. I felt safer cooking myself, rather than going out to eat.

Once I had my daughter and she was diagnosed, It was my goal to teach her to advocate for herself, understand what she cannot eat, and to teach her that it is a life adventure with many safe possibilities. My 5-year-old daughter Bella and I are constantly going on gluten-free adventures to discover new safe and delicious places. On weekends, we go on gluten-free family adventures too.

I am so excited to be a part of the amazing team of Beyond Celiac ambassadors and to continue to help raise awareness and support others in the celiac community!
