Can gluten sensitivity or celiac be triggered suddenly after the type of bread changes? For example, from using regular store-bought high-fiber bread to homemade bread using bread flour. My daughters’ symptoms include watery/liquid stools, recent bloating, sore tummy, more irritable during physical activity, increased fatigue, absent fever, still interested in food.
It is unlikely that changing the type of bread would trigger such a reaction. This is not a scenario that we typically encounter. Sometimes there can be increased symptoms with an increased amount of gluten in the diet (increased gluten load). But, generally, patients with gluten sensitivity react to gluten in all forms. It is possible that the symptoms were due to a viral illness that occurred at the same time. If the symptoms are persistent, however, I would recommend a visit with your pediatric gastroenterologist.
