Gluten-Free Flours

There are a number of gluten-free flours available on the market, so it can be a challenge to decide which flour is best for different types of baked goods. If you bake casually, consider 1:1 flour mixes; they are intended to substitute for traditional wheat flour on a 1 to 1 basis, so you won’t have to adjust the recipe at all.

If you bake more frequently, you may want to experiment with different single ingredient flours, or mixing different flours with different thickeners (thickeners or starches take the place of gluten) to achieve the desired taste or texture. Learn more about gluten-free baking.

Regardless of which flour you choose, it’s imperative to purchase products labeled gluten-free, even single ingredient flours like rice or corn, because many gluten-free grains since are grown, harvested and processed in facilities that also manufacture wheat, barley, or rye and cross-contact can occur.
