Meringue Cookies

Meringues are chewy desserts with a crisp exterior and soft inside. The trick is a long bake at a low temperature. Happily, they are naturally gluten-free!
This recipe is for a simple vanilla meringue, but you can flavor it however you’d like. Common flavors are chocolate (cocoa), espresso, lemon, and pistachio, but experiment to find something that suits your tastebuds!
Ingredients:
- 3 egg whites at room temperature
- ¼ teaspoon cream of tartar
- ¾ cup superfine sugar
- ¼ teaspoon vanilla
Directions:
- Preheat oven to 200°F.
- Beat 3 egg whites with 1/4 teaspoon cream of tartar until soft peaks form.
- Add ¾ cup superfine sugar and ¼ teaspoon vanilla until stiff peaks form.
- Dollop batter onto a baking sheet covered with parchment paper and bake at 200°F for 1 hour and 45 minutes, or until dry.
- Let cool. Top with some cocoa powder, powdered espresso, or other flavoring, if you desire.
