In May 2014, the National Foundation for Celiac Awareness (NFCA) team traveled to Chicago for the 2014 National Restaurant Association (NRA) Show. There, the team had the opportunity to be in front of thousands of restaurant industry professionals to spread the word: There’s more to gluten-free cooking than just using gluten-free ingredients; training and education are key.
“Gluten-free” was without a doubt a buzz word at the NRA Show. With the help of our friends Chef Jehangir Mehta, a Next Iron Chef finalist, Chef Maxime Bilet, renowned cookbook author and Chef Maneet Chauhan, a judge on The Food Network’s Chopped, NFCA put gluten-free on the center stage – literally!
