Reports show that gluten-free products are on the rise throughout the country. Revenues from items labeled gluten-free have increased almost 20 percent in the past year to $1.7 billion from $1.4 billion in May 2007. Also, sales have increased 74 percent compared with 2004 and numerous food stores and companies are beginning to make available more gluten-free products.
