I was diagnosed with celiac disease (and SIBO!) in May 2025 while living abroad in London. I’ve since moved home to New York where I’m experiencing my hometown for the first time through a gluten-free diet.
Saying goodbye to nearly all of my favorite sweets, restaurants, bagels, and grandma’s homemade goods was a pain I could have never prepared for. I gratefully had a wonderful 25 years enjoying gluten with no repercussions (anything biscoff was always my favorite), so the transition was not easy nor welcomed.
Fortunately, if there’s any generation to be gluten-free, it’s now! I’ve a newfound passion for food and connection—how to make something tasty without sacrificing health and a gentle reminder that connecting with/over/through food is essential to a happy life. Finding yummy and safe options while out and about, or having a waiter that actually understands, now brings me joy and relief like no other (it’s always the little things!).
I’m eager to bring awareness to the community that exists outside of celiac disease and to make it understood that being gluten-free isn’t simply a preference. My hope is that we can all find those little moments of joy and excitement wherever we go.
