Three students studying outside.

Some times in our lives are busier than others, but August and September seem to be reliably busy. Students prepare to go back to school, young adults move in with new roommates, and parents re-adjust to life with kids in school. Even for those without children, the last bit of summer often marks a shift in pace as vacations end and fall routines start to take hold. Through it all, Beyond Celiac has resources to make all these transitions easier.

Mascarpone Strawberry Cream

This is a very soft, very rich dessert, no baking required! Just mix the ingredients and refrigerate. Try using sweet raspberries, peaches, nectarines or whatever fruit is in season. Tasty on its own or with shortbread.

Trivia Question of the Month

Question

Is couscous gluten-free?

Answer

No, couscous is not gluten-free. It’s made from semolina, which is a type of wheat. For a gluten-free substitution, try quinoa.

Voices of Celiac: Sam’s Story

“[After diagnosis,] everything was a challenge. I was 19 and had to relearn how to live. My mental health was as much of an issue as my gut health because shortly after the sinus surgery, a few people who I considered close to me passed away. I wasn’t only in college while all of this was happening; I was grieving the loss of loved ones and also a loss of myself.

If I had done more research, and gone to a doctor right away, I would have been much better off. I knew I had celiac disease, but I didn’t want to believe it. I didn’t want to change my life.”
