Hi! My name is Cheryl and I was born and raised in Queens, New York. I’m currently a medical student at Columbia University Vagelos College of Physicians & Surgeons.
I was diagnosed with celiac disease two years ago, during the summer after my first year of medical school. It was very unexpected and I feel incredibly grateful for my doctors and nutritionists who have guided me through my diagnosis and the gluten-free lifestyle. To this day, both celiac disease and gluten-free cuisine remain very unexplored topics within Chinese culture. In the beginning, it was a lot to adjust to, since food has always been such a central component to so many customs and traditions that I grew up with, and I’ve spent a lot of time figuring out (and still learning!) how to adapt.
I find the mission of Beyond Celiac so inspiring and I’m very excited to join as an Ambassador to spread awareness about all aspects of celiac disease and the community affected by it.
