Madwoman Foods, a Minneapolis-based gluten-free food store, was recently forced to close up shop. A staple for celiac and gluten-free consumers, the small store could not keep up with skyrocketing production costs or the stiff competition posed by larger chains. As the owner notes, “When a niche [like gluten-free] goes mainsteam, you lose that niche.”
