Hearty, Healthy, Slow Cooker Soup

Ingredients:

  • 4 medium boneless, skinless chicken breasts (If you want vegan, use 3 – 14 oz. cans or 2 cups dry of your favorite beans.)
  • 14oz. can diced tomatoes
  • 14 oz. can tomato sauce
  • 1 chopped onionGluten-Free Hearty Soup
  • 5 garlic cloves
  • 2 tbsp dried basil
  • 1 tbsp dried Oregano
  • 1 tbsp dried thyme
  • 1 tbsp dried sage
  • 2 bay leaves
  • 4-6 cups chopped veggies (Choose your favorites or least-favorites-but-you-know-you-should-eat-them veggies. The flavors of the tomatoes and spices take over.)
  • 3 cups chopped potatoes
  • 3 cups gluten-free chicken broth (Or if you are vegan, use veggie broth.)

Directions:

   1. Put everything into the slow cooker and set it on high for 5 hours or on low for 8 – 9 hours.
   2. Ladle out and enjoy!
