jicama slaw

Serves 4

Ingredients:

  • 1 large cucumber, thinly sliced
  • 1 small jicama, peeled and diced
  • 1 1/2 tsp. honey
  • 1 Tbsp. olive oil
  • 2 Tbsp. balsamic vinegar
  • 2 Tbsp. freshly squeezed lemon juice
  • 1/4 tsp. sea salt
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika

Directions:

  1. Combine all ingredients into a large bowl; toss until well combined. Serve immediately.
