FDA Releases Proposed Rule to Establish ‘Gluten-Free’ Labeling Compliance Requirements for Fermented, Hydrolyzed and Distilled Foods

The FDA seeks to apply ruling to commonly confusing gluten-free foods.

The celiac disease community has been awaiting proposed guidance on hydrolyzed and fermented foods from the US Food and Drug Administration (FDA) since its final gluten-free labeling rule was released in 2013. The agency has finally released draft language for public comment.

Hydrolyzed and fermented foods covered by the FDA include products like:

  • Yogurt

  • Cheese

  • Pickles

  • Sauerkraut

  • Green olives

  • Vinegar

  • FDA-regulated beers (Note: Most beers are regulated by the Tobacco Tax and Trade Bureau, not the FDA)

The FDA is accepting public comments beginning Wednesday, November 18. To electronically submit comments to the docket, visit www.regulations.gov and type docket number “FDA-2014-N-1021” in the search box.
