Firefly restaurant chef shares gluten-free picks with Eatocracy.
The gluten-free diet has graced CNN’s website once again. Eatocracy, CNN’s zesty food blog, listed “Gluten-Free Ingredients to Cook With in the New Year” in yesterday’s [email protected] post.
Eatocracy editors recruited celiac-friendly chef Daniel Bortnick of Firefly restaurant in Washington, DC, to create the list. Bortnick selected vegetables, quinoa, beans, eggs and nuts & seeds as his five gluten-free must-haves, pointing out their versatility and health benefits.
This isn’t the first time Eatocracy has highlighted gluten-free. The blog posted a “Lunchtime Poll” about special dietary needs on Aug. 31, 2010, and featured a [email protected] about “Cooking a Gluten-Free Thanksgiving Meal” in November 2010.
