Made with black beans, this gluten-free dessert is among items on new food truck menu.
Chef and cookbook author Rocco DiSpirito has received rave reviews of his gluten-free brownie cupcakes, and now you can make them at home.
The celebrity chef recently launched a food truck with a “healthy comfort food menu” that includes a 55-calorie gluten-free chocolate brownie cupcake. He shared the recipe on the daytime show, “Anderson,” and it is now available on the show’s website. (Beware: The televised version included whole wheat flour instead of gluten-free flour).
During the broadcast, Chef DiSpirito explained the concept behind his Now Eat This! food truck. “It’s a Robin Hood method. I sell to adults and give to children,” he said.
Proceeds from the truck support the chef’s Free Lunch Fridays, which feed up to 200 children a healthy lunch each week.
