11/18/2010

NFCA Vice President Jennifer North recently shared her personal connection to celiac disease for an article on “Celiac Disease and Childhood Food Allergies.” The article gave a basic overview of celiac disease, including the damaging effects it can have when left untreated. Baking Gluten-Free

North’s daughter, Molly (see right), was diagnosed at age 15 after suffering unexplained weight loss. Her health improved after switching to a gluten-free diet. "Celiac has over 300 symptoms, so there really isn't a typical profile," North told the author. "It can onset at any age."

She also emphasized that individuals should contact their doctor and get tested for celiac disease before adopting a gluten-free diet.
