University of Nebraska Foodservice Director says students are choosing their college or university based on dietary needs.
College students face unique challenges when living with celiac disease or non-celiac gluten sensitivity (‘gluten sensitivity’) on campus. Luckily, more and more schools, like the University of Nebraska in Lincoln (UNL), are catching on to the special dietary needs of their students.
The foodservice team at UNL went through the National Foundation for Celiac Awareness’ (NFCA) GREAT Schools, Colleges and Camps program, an online training course dedicated to teaching these sectors how to safely serve gluten-free options. Since taking the training, the UNL foodservice team put special procedures in place to ensure that gluten-free students have safe, tasty options.
“Students are now starting to make their decision on where they’re going to go to school based on if they’ll be able to get the kind of food they need for their diets,” said Pam Edwards, Assistant Director of Dining Services at UNL, in an article featured in the Daily Nebraskan.
The article also featured input from NFCA intern Lianna Prill, currently a freshman at UNL utilizing the gluten-free options offered by the school.
